4 kg to 6 kg eye-burning rib (ask for the small end), well trimmed
1 tablespoon rapeseed oil
Salt and pepper to taste
Container: Baking pan.
Preheat oven to 350 degrees F.
Rub the whole roast with butter and sprinkle with salt and pepper. If available, place an oven-resistant thermometer in the middle of baking, avoiding the bones. If an oven-resistant meat thermometer is not available, check the meat temperature during the last 15 minutes of cooking with an instant thermometer to check for readiness.

RARE (140 degrees F): 18 to 20 minutes per pound
MEDIUM RARE (145 degrees F): 20 to 22 minutes per pound
MEDIUM (160 degrees F): 20 to 24 minutes per kilogram
MEDIUM GOOD (165 degrees F): 22-24 minutes per pound
GOOD (170 degrees F): 22-26 minutes per pound
