2 kg small red potatoes, grated and cut in half (do not peel)
3 tablespoons olive oil, optional and more
Fresh ground pepper
Dried rosemary, crushed
Dried or freshly ground garlic
Container: Large tray lined with foil
Preheat oven to 425 degrees F.
Fill a large bowl with chopped potatoes.
Pour oil and spices on potatoes, stir to cover.
Place the potatoes in a single layer on a foil-lined baking sheet on which the foil has been sprayed with a non-stick cooking spray.
Bake uncovered for 40 to 45 minutes, turning half the baking time. Baking time may vary depending on the size of the potatoes.
Potatoes should be light golden brown and tender.
Experiment with other spices if desired.
