Carrot Soup

This easy carrot soup recipe is a great way to spend a bag of carrots forgotten in your product drawer. Carrots are cooked together with aromas such as onions, garlic and fresh herbs before being pureed into a silky smooth soup, delicious for dinner or packaged for lunch.

1 tablespoon butter

1 tablespoon extra virgin olive oil

1 medium onion, chopped

1 stalk of celery, chopped

2 cloves garlic, chopped

1 teaspoon chopped fresh thyme or parsley

5 cups chopped carrots

2 glasses of water

4 cups chicken broth with reduced sodium content, broth without chicken (see note) or vegetable broth

½ half and a half cup (optional)

½ teaspoon of salt

Freshly ground pepper to taste
